The Man Who Shot Liberty Valance

Church today. Really fun to see old acquaintances from the ward again. I learned that the missionaries are teaching an old investigator my trainer and I taught 20 years ago.

I made the Mexican meal for tea- heaps of people...the elders, Terri's sister and her family, a new couple in the ward, some friends of the Rechters, the Rechters and me...well, I guess it was only 17 people.....but it seemed like a lot.

Food today- hot cross bun for breakfast, my yogurt and salt and vinegar chips for a snack, real chips later, and my meal of chicken enchiladas, massive nachos with ground beef, corn, kidney beans, jalapeƱos, olives, cheese, and salsa...oh, and chips hahaha, my new favorite guacamole, rice- made by Stephen, fresh salsa- made by Terri, and a Pavlova- made by Stephen and lime fruit salad - made by Terri for dessert, plus I made chocolate chip cookies.

I spent time talking to the elder from the U.S. who seemed very shy and in need of some kindness- his companion seemed a rather rude lad - it was fun to re-live the mission days a bit telling him stories of my time in Bendigo. This may have been rather boring for the elder, but I tried.

Here are the pics. Of note:  I hand-trimmed raw chicken all by myself- something I never do and never wish to do again....and there are several up close snaps of Kelsey- she stole my camera whilst I was cooking and left some little gems for me.

Wow that's a lot of people to make food for. Or a lot of people for which to make food. ;)
Looks like it was a success. Nice of you to be chummy with the mish-on-ry. Not easy being new and with a crappy companion. Oh and well done cutting the chicken. I hate that too-quite unsavory. I always have Melanie do it.

I always make mom do it or I buy the stuff Harmon's has completely trimmed and cut so I don't have to do anything besides throw it in the pot without touching it. Stephen assured me he would do it so we didn't buy the all the way trimmed kind. However, I had to get it in the oven before he got home - hence necessitating the grotesque task falling to me. Thank goodness they had gloves. I still whined the whole time I was cutting.....ick. :)

Was it difficult to find ingredients for you Mexican dish? We always had a hard time finding anything like that.
